2 sticks butter, softened
3 1/2 cups powdered sugar, sifted
1/2 tsp vanilla
1/2 tsp milk (or rice milk)
lemon zest (from 1 lemon)
1 tsp (more or less) fresh lemon juice
Cream the butter on medium speed for 2 minutes.
Add the powdered sugar one bit at a time until thick.
Add the vanilla, milk, leomn zest and juice.
